I LOVE cooking but hate spending hours upon hours in the kitchen. Whenever I am able to make quick meals that have loads of flavor, and minimal dishes I get too excited! This recipe uses ingredients that are simple to find if you don’t already own them. Since I am such a lover of 1 pan dishes my Pinterest board usually has a few of these 1 pan dishes that gives me inspiration to the meals I create.

As the temperature starts to drop, nothing warms me up more than some good comfort food. This week I decided to dive into my spice cabinet and pull up some of the spices I picked up in Thailand. Last May me and a few of my girlfriends (9 to be exact) made our way to Thailand for a 9-day trip! Just to give you guys a quick recap if you’re thinking about going to Thailand, you definitely should. I didn’t expect to fall in LOVE with the food, but I did. I wanted mango and sticky rice at the end of every meal, and I’m very sad I can’t start my day with a Thai Iced Coffee(if you haven’t ever had it you can recreate it; coffee + condensed milk–that simple).
Thailand is so beautiful and has so much culture for you to see. It is also a very affordable vacation, and I was able to get a great price on my ticket. (I believe it was around 800 which is a steal) If you know the exact dates you would like to travel I would track your flights with the mobile app called Hopper. This app has changed the way I travel and saved me tons of money! It tells you the best time to travel and alerts you when prices drop for your trips.
When you arrive in Thailand expect to get some meals for $10 or less, and do yourself a favor and treat yourself to a SPA! Make sure you splurge on this too. I must admit I took the cheap way the first time around and got a 65 minute massage for about 20 bucks, and let me just say that was an interesting experience. Spend the $150 and really treat yourself you won’t regret it.
