Whenever I’m having a busy week, I know making soup is a quick meal. Today is the second day of spring in NYC, but it feels nothing like it. 32 degrees and we have another Nor’easter!
I have been recently obsessing with soups, so when I found the Aromatic Butternut Squash soup at Whole Foods, I was hooked. I took a glance at the ingredients and noticed it wasn’t much different from the butternut squash soup I have made in the past. The only new addition is to add sweet potatoes.
This has to be the easiest recipe and requires minimal prep work. If you are pinched for time and don’t want to deal with peeling and cutting the butternut squash, I usually use the pre-cut squash you can find at most grocery stores. Whole Foods & Trader Joes has a great one!
The hidden ingredient in this is mascarpone cheese! I’ve added heavy cream to soups before but didn’t give me that creamy texture I was looking for. Adding Mascarpone cheese to the soup acts as a thickening agent and makes this soup so creamy and yummy! I also used Himalayan pink salt from Trader Joes, which is a staple in my kitchen.

Sweet Potato and Butternut Squash Soup
Ingredients
- 2 cups butternut squash cut into cubes
- 2 small sweet potatoes cut into cubes
- 3 cloves of garlic sliced
- 2-3 cups vegetable broth I used low sodium, but choose your preference
- 1 tsp nutmeg
- 2 tsp fresh ginger
- 2 tbsp butter
- 4 tbsp mascarpone cheese
- salt to your taste level
- pepper to your taste level
- brown sugar to your taste level
Instructions

Add the squash, sweet potatoes, garlic, ginger and broth in the crockpot. Cook on high for 2 hours, until soft and cooked through

I do not have an immersion blender, so I transfer everything to my blender. If you have one, you can leave it all in your crockpot. Add the remaining seasons, butter and mascarpone cheese and puree until smooth. Adjust the seasonings to your taste level.
