Summer is “officially” here even though we are still social distancing. Although it seems like the folks in Oakland, have decided that they are ready to be outside with no mask. I am still social distancing and staying away from the crowds. I hope you are staying safe and enjoying the summer heat that is finally here. What other way to enjoy the start of summer with a refreshing ice pop and margarita. No need to chose; you can have them both! Jump to Recipe
For the past few weeks, I have been indulging in spicy margaritas. I mean, who doesn’t love a good spicy Margarita? I will be honest. I have been a bit lazy, and I’m not making my margarita mix from scratch. I did, however, find an amazing mix that I love. I grab this classic Margarita Mix from Powel & Mahoney, and you can buy it at Target. The best part is it will only cost you $6.99.
To make the mango pops, I used this popsicle mold I picked up from Amazon. I have had this for over a year and finally found the perfect way to use this. This mold is pretty easy to use and comes with a few popsicle sticks to get you started.
The perfect way to eat this pop is to dip it into your margarita, and you will get the best of both worlds! If you are afraid of the spice, feel free to make this without the jalapeño I’m sure it will be just as good! If you have time, you can infuse your tequila the day before by adding 1 jalapeño to 1/2 cup of tequila. If you are in a pinch and have a cocktail shaker, you can add the jalapeño, ice, and tequila to a shaker for a quick infusion that works just as well.pop
Eat these pops on their own or dunk it into your margarita as ice, and now your drink as just been elevated 🙂 Thank me later!
