Happy Easter Sunday Guys! Hope everyone got to enjoy some time with your loved ones and eat some delicious food! Easter as an adult is a little different. I don’t have the luxuries of being gifted an Easter Basket (this adulting thing does suck). I still do participate in the Easter Egg Hunt since I am forever a kid at heart :). Today the weather went all the way up to 80 degrees, so it was perfect timing for me to whip up some peach cobbler for the family. I am just a few days late with this one National Peach Cobbler Day which was April 13. Cobbler’s are such an easy recipe to make, and you end up with amazing results. There are many different ways you can make peach cobbler. Certain recipes call for a more liquid batter that you lay in the pan and top with peaches. My recipe has you dropping biscuits right onto the peach mixture.
Since it is nowhere near summer peaches are not in season in my town. I used frozen peaches which are easy to work with so no need to worry about peeling the peaches and soaking off the skin. When you use the frozen peaches, all you have to do is let them that out for about 20-30 minutes, and you’re ready to go.
Toss your peaches in a bowl and add the sugars, salt, flour, and cinnamon. Make sure to give it a good mix at this point you may want to test the peach mixture and make sure it has the right amount of sweetness. If not just add some more brown sugar.
Now comes the hard part you have to wait about 30 minutes before you can enjoy this.
The only way to serve peach cobbler is with some creamy vanilla ice cream. If you are a Costco lover like myself, do yourself a favor and pick up their Super Premium Vanilla Ice Cream it is amazing! Now you have yourself a nice serving of Peach Cobbler Ala Mode!

Peach Cobbler
Ingredients
Peach Filling
- 1/4 cup dark brown sugar
- 1/4 cup white sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon cinammon
- 3 pounds frozen peaches thawed
- 1 teaspoon cornstarch dissolved in 1 tablespoon water
- 1 lemon juiced
Biscuits
- 2 cups all-purpose flour
- 2 tablespoons dark brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 3/4 cup unsalted butter cold
- 1/4 cup mascarpone cheese
- 2/3 cup whole milk
Instructions

Preheat oven to 450 degrees.

Remove peaches from bags, and let sit in the bowl until they are thawed and no longer frozen. Should take about 10-20 minutes.

To make the peach filling: In a large bowl, stir together the brown sugar & white sugar, flour, cinnamon, and salt.

Add the thawed peaches to the mix and gently toss to coat.

Give the mixture a taste, and if you want to add more sugar or spices do so now.

In a small bowl mix together the cornstarch, water and add the juice of 1 lemon to the mixture.

Add cornstarch mixture to the peaches, and mix to incorporate

Butter a 12 by 8-inch oval dish and add peach mixture to the pan.
To make the biscuits

Combine flour, brown sugar, baking powder, salt and baking soda. Whisk until well combined

Add your cubed cold butter to the bowl. Don't be afraid to get your hands dirty! You want to combine this until you have a crumbly mixture. Don't worry small chunks of butter is a good thing.

Add the mascarpone cheese to the mixture, using your hands to combine the cheese into the mixture gently.

Pour in the milk and use a wooden spoon until the dough comes together.

Take spoonfuls of the dough and drop on top of the peach mixture. (If desired roll each dough ball in brown sugar & cinnamon for extra goodness)

Place in oven and reduce the oven temperature to 350 degrees F. Bake uncovered for 30-40 minutes. When biscuits are golden brown, the cobbler is ready to be removed.

Let cobbler sit for 15 minutes before serving. Serve with vanilla ice cream and enjoy!
