One of my favorite past times to help cheer me up is baking. I haven’t been able to do as much as I wanted over the last few weeks because I have been exhausted. I finally decided to take some time out and make one of my favorite side dish or main dish, because this is just that good. I honestly feel that every culture has their version of a meat pie, beef patty, empanada, or hot pocket.
If you still are a little lost its basically a delicious pastry with a meat filling inside. If meat is not your thing you can fill it up with yummy veggies for sure. I filled mine with ground beef, potatoes, carrots, and onions.
I can remember having a meat pie at almost every Nigerian party while growing up. Meat pies were usually one of the first items to go! I have put my own spin on this recipe. The list of ingredients may seem a bit intimidating, but if you can make the dough ahead of time to save some time. Also if you are really not feeling like making your own dough I tried this again with pie crust from Trader Joe’s. I rolled it out and got it to the right size. It worked just as well and will save you a ton of time.

Meat Pie Recipe
Ingredients
- 1 pound of meat
- 1 potato
- 2 medium-sized carrots
- 1 medium onion
- 2 tablespoons of flour
- 1 ½ cup of water
- 1 cooking spoon of vegetable oil
- ½ teaspoon of thyme
- ½ teaspoon of curry powder// or onion powder
- 2 knorr chicken cubes
- ½ teaspoon of garlic powder
- Salt to taste
- Dough:
- 3 ½ cups of all-purpose flour
- 1 tablespoon of sugar
- ¼ teaspoon of salt
- ½ teaspoon baking powder
- 2 eggs 1 for glazing/ egg wash
- Water enough to bind the mix so that it will form
Instructions

Dice potatoes, onions, and carrots. Place pot on medium heat when its hot add onion Sautee until translucent

Add meat stir and break up pieces. Fry 2-3 mins

Add diced potatoes and carrots 1 cup of water, add knorr cubes, thyme, curry powder, and garlic.

While the meat mixture is cooking, mix 2 tablespoons of flour with 1/2 cup of water, mix till you get a milky consistency and set aside.

Check the mixture and once the veggies are cooked add the flour and water mixture to the mix and mix completely

Switch the heat off and let the mixture sit in the pot for 2-3 minutes. Once the time has passed the mixture will be a nice creamy consistency and not dry. Taste the mixture and make sure you like it. Add any additional seasonings.

Dough:

Mix with kitchen gloves as it makes the process easier. If you don’t have its fine to use your hands.

Combine flour, sugar, salt and baking powder

Add the butter and crumble until you see little bits of the butter

Crack 1 cold egg into the mixture

Add enough water to bind the dough. You will probably need around ¼ cup of cold water

Knead for 1 minute and enough for easy rolling. Don’t want to overwork the dough it will make the dough very hard

Wrap the dough in plastic wrap, let the dough rest for 30-40 mins

Roll the dough out and assemble meat pies. I used a large circle cookie cutter. Place the meat on one side of the meat pie. Close the meat pie and use some of your egg wash to seal the meat pie. Brush some of the egg wash on top of your finished meat pie.

Bake in the oven at 350 for 35 mins
