Who doesn’t love a good biscuit recipe? Through my years of searching for the perfect biscuit recipes I have searched high and low, but I think I finally have my go-to biscuit recipe! What I love about this recipe is the simple list of ingredients. 10 ingredients to be exact!
I am not the biggest fan of having to buy buttermilk because I use it once or twice and it always goes bad after that! This recipe comes from Ayesha Curry cookbook The Seasoned Life, which I can easily see myself cooking a lot of her recipes. Such a big fan of her’s and she is truly amazing! More to come on reviewing the rest of the cookbook in the next month. I know I did say this is an easy recipe but it does call for an uncommon ingredient which is mascarpone cheese. At first, I was very skeptical because I haven’t used much of this cheese in my baking. For those of you who are not familiar with mascarpone cheese it’s the delicious feeling inside of cannoli 🙂 Anyway, it adds a nice creamy texture to the biscuits so you do not want to skip this ingredient! You will also need a cast iron for this pan you will want to invest in one of these pans they are so versatile, and allow you to move from the stove top to the oven without having to change dishes. These biscuits are the perfect vehicle to make amazing breakfast sandwiches!

Hot-Pepper Cast-Iron Biscuits
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons dark brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 3/4 cup unsalted butter cold and cubed plus 1 tablespoon of unsalted melted butter
- 1/4 cup mascarpone cheese
- 2/3 cup whole milk
- 1/2 teaspoon freshly ground black pepper
- Honey for drizzling
Instructions

preheat oven to 450 degrees. Prepare your cast iron skillet. (I used non stick spray make sure this is very well oiled you don't want anything sticking to this)

Combine flour, brown sugar, baking powder, salt and baking soda. Whisk until well combined

Add your cubed cold butter to the bowl. Don't be afraid to get your hands dirty! you want to combine this until you have a crumbly mixture. Don't worry small chunks of butter is a good thing.

Add the mascarpone cheese to the mixture, using your hands to gently combine the cheese into the mixture.

Pour in the milk and use a wooden spoon until the dough comes together.

Flour a clean surface with a handful of flour, and roll the dough out until its about 1 inch thick

Using a 2 inch cutter (or an empty glascut your biscuits (dip your cutter in flour in between each cut)

Roll up any scrapes and re roll into a ball, and cut again until you have 12 biscuits.

Place the biscuits inside your well-oiled cast iron skillet. Making sure all the biscuits are toughing. Brush the tops with the melted butter and sprinkle black pepper on top. Bake for about 20-25 minuets until they are golden brown.

Remove from oven and let cool for 5 minutes. Drizzle with honey and serve warm.
