Looking for a quick & easy delicious brunch idea for Mother’s Day this weekend. As I have mentioned multiple times now I am a LOVER of all kitchen gadgets. Especially if they save time, the quicker I can get to eat my meal I’m all about it.
Sometimes I like to dine in and create my favorite brunch dishes. That is exactly what I did this past weekend. I was craving chicken and waffles, and had all the ingredients at home! This is such a simple and quick recipe you will be in and out the kitchen in 30 minutes 🙂 Especially with Mother’s Day coming up why not make your mom a nice breakfast spread.
I also prefer using brown sugar when I can while cooking; I think it adds some great flavor to it. For these buttermilk waffles, I highly encourage you to use REAL buttermilk it takes these waffles to the next level. As you are waiting for the rest of the waffles to cook, place the waffles individually on a cooling rack so they can remain crispy! No soggy waffles over here!
This is the perfect base to your brunch, you can go crazy and top your waffles with fresh fruit, make this a more hearty meal and pair it with chicken wings. Or just keep it simple and top with some butter and maple syrup!
Buttermilk Waffles

Ingredients
- 2 cups all-purpose flour
- 3 tbs brown sugar
- 4 tsp baking powder
- pinch of salt
- 1 3/4 cup buttermilk
- 2 eggs
- 1/2 cup unsalted butter melted
- 3 tsp vanilla extract
Instructions

Heat up your waffle iron, grease with nonstick cooking spray.

In a large bowl, whisk flour, brown sugar, baking powder, and salt. Add butter, milk, eggs and vanilla to the center of your mixture.

Combine the mixture until everything is thoroughly combined, be sure not to over mix as this will result in tough waffles.

Let the batter sit for 2-3 minutes. My waffle iron came with a handy measuring cup, but I would say place 1/2 cup of mixture in your iron.

Place waffles on a wire rack to cool. Do not stack the waffles on top of each other so they can remain crispy!
