One of the hard things about being a food blogger is balancing the delicious drool-worthy recipes with healthy recipes. True life I only try to make my non-healthy recipes when I know I have some function coming up and I can bring the rest of the food for people to enjoy. No wasting food over here, and now that I don’t have roommates it makes it a little harder to get rid of food. I do miss my certified taste testers who always kept it real with me.
So here is me balancing my recipes and giving y’all a quick, healthy alternative to carbs! We all know summer bodies are made in the winter, so why not get a head start! Everyone has probably tried to make some version of cauliflower rice in the past and either it came out gross, or you ended up just eating huge chunks of cauliflower. I can say that I’ve fallen victim to both instances.
While I was making this recipe this week, I discovered my food processor broke after I had already cut the cauliflower into smaller pieces. You don’t need a food processor to rice the cauliflower. If you choose to use a hand grater itis easier to do it in about 3-4 chunks and not bite-size pieces. Your fingers will thank you!
Another tip I discovered is that the sesame oil helps make this rice taste exactly like fried rice. Adding in the eggs, peas, and carrots give it a nice texture as well. These measurements are an estimate so always start small give it a little taste and add in more if needed. Use this method especially when you are adding in the soy sauce mixture into the rice. Only start with a few spoonfuls and add in the rest. I didn’t end up using all 1/4 cup to make my rice. I ended up pairing my baked chicken breast, and it was a nice dinner to have as in trying to avoid carbs.

Fried Cauliflower Rice
A delicious alternative to fried rice. You won't even be able to tell that this isn't rice!
Ingredients
- 1 head of cauliflower
- 4-5 carrots chopped into bite sized pieces
- 1 yellow onion
- 1/2 cup frozen peas
- 2 eggs
- 1 tbsp Sesame Oil
For the Sauce (You will not use all of the sauce)
- 1/4 cup Soy Sauce
- 1 tbsp Brown Sugar
- few pinches of pepper or red pepper flakes
Instructions

Cut up your cauliflower into halves and use a box grater to "rice" the cauliflower. You can also place this in a food processor to make this process easy! As you grate the cauliflower this will start to resemble rice.

In a medium-sized pan drizzle in the sesame oil and next add in the onion, carrots, and peas. Cook until tender this should take 2-3 mins.

While the veggies are cooking start to prepare the sauce. Whisk together the brown sugar, soy sauce, and pepper. Set aside.

While the veggies are cooking add the eggs to the other side of the pan, and start to scramble to cook. Combine the eggs and veggie mixture in the pan.

Add to the pan the cauliflower mixture, and slowly add in 2-3 tablespoons of the sauce. I did not end up using all my sauce so make sure you are tasting along the way.
