Summer is “officially” here even though we are still social distancing. Although it seems like the folks in Oakland, have decided that they are ready to be outside with no mask. I am still social distancing and staying away from the crowds. I hope you are staying safe and enjoying the summer heat that is finally here. What other way to enjoy the start of summer with a refreshing ice pop and margarita. No need to chose; you can have them both! Jump to Recipe
Nigerian Meat Pie
One of my favorite past times to help cheer me up is baking. I haven’t been able to do as much as I wanted over the last few weeks because I have been exhausted. I finally decided to take some time out and make one of my favorite side dish or main dish, because this is just that good. I honestly feel that every culture has their version of a meat pie, beef patty, empanada, or hot pocket.
If you still are a little lost its basically a delicious pastry with a meat filling inside. If meat is not your thing you can fill it up with yummy veggies for sure. I filled mine with ground beef, potatoes, carrots, and onions.
Best Ever Chicken Thighs
I know we are all probably tired of the kitchen and would love to be back out at our favorite restaurants eating fabulous meals and not worry about who is going to clean up the dishes after. I am about 8 weeks in of me social distancing, working from home, and I am counting down the days until we can return back to our normal routine.
I have been cooking up more meals than usual which means there is much more content for me to share with you. This is a pretty easy recipe that includes a delicious sauce. When you add heavy cream to any dish it’s bound to be delicious. The ingredients aren’t too hard, and you will be able to find these ingredients hopefully in one store as we are dealing with the crazy lines during this pandemic.
This is a staple dish in my house now and I make this about twice a month it’s so good! You can serve this over rice, pasta, mashed potatoes the options are endless.
Happy cooking and let me know if you love this dish!
Jerk Chicken & Rice and Peas
This is day 3 of my new updated routine as we are on lockdown due to the spreading of the Coronavirus. This basically means we are not to leave our house for non-essential items but we can go to the grocery store, doctors and that’s about it. As of last week, my job decided to have us work from home as a part of the social distancing. So as you can imagine I have had a little more time on my hands, and have been doing a lot of catching up with friends, facetime calls, and cooking!
As part of the lockdown, I will be working from home from now until April 7 or who really knows. My normal routine has been shifted so that we can stay safe and hopefully stop the spreading of COVD-19.
Black Vines- Celebration of black Wineries
One great thing about living here in California is the great access I have to amazing wines. I have Napa in my backyard, which is an amazing perk of living in the bay, and honestly, probably one of the top reasons I’m still here. Little did I know that there are plenty of black winemakers here who mostly are outside of Napa. I was happy to have been able to attend this event this year, and it was a great event to close out Black History Month.
Best Ever Chili Recipe
One-pot dishes are my thing! Especially these days now that I have so much on my plate juggling my full-time job, Dabira and Our Perfect Palette somethings things just don’t get done. Sad to say, but nowadays, I prefer to spend the least amount of time in the kitchen, but that is also hard when I enjoy eating and cooking.
The Perfect Holiday Cocktail
The holiday season is upon us, and if you are anything like me, you love a good holiday cocktail. I am sharing one of the cocktails that I fell in love with when I went to Morocco if you remember my post on how to spend 8 hours in an airport.
Best Ever Chocolate Chip Cookies!
Now that I’m living in California and miles away from friends and family, the top two questions I get are:
- When are you moving back?
- Can you make some cookies?
If I would have known my cookies where these popular maybe I should have continued with Top Shelf Treats and not pursue Dabira 🙂
Nigerian Jollof Rice
Four Ingredient Cheese Ball
The holiday season is still upon us and office parties are in full effect! My go-to recipe during the holidays when I do not want to turn on my oven is this cheese ball recipe that never disappoints. It’s an easy 4 ingredient dish, and uses ingredients you may already have in your cabinet. One ingredient that you can not substitute in this dish is the ranch dressing season packet. It truly brings this dish together and also works as a secret ingredient. One thing I’ve noticed when I make this cheeseball everyone is always stumped on what that ingredient bringing it all together.Continue Reading
