One-pot dishes are my thing! Especially these days now that I have so much on my plate juggling my full-time job, Dabira and Our Perfect Palette somethings things just don’t get done. Sad to say, but nowadays, I prefer to spend the least amount of time in the kitchen, but that is also hard when I enjoy eating and cooking.
I’ve learned the importance of meal planning again and making sure things are all preps and ready, so I can get in and out of the kitchen. Today I’m sharing one of my favorite recipes, chili! Like who doesn’t enjoy chili, and we are not talking about that mess that comes in the can (No Shade).
Although this is not the fastest recipe, it is so worth it. Chili is also one of those things that get better the longer it sits. When you hear this up the next day, I guarantee you it will be bomb. Over the years, I’ve dibbled and dabbled with different recipes. This recipe is adapted from Ayeesha Curry The Seasoned Life. The hidden ingredient in this is the maple syrup. I know it does seem odd at first, but it adds a nice punch to the chili and balances out all the spice. I love spicy, so feel free to alter the recipe to your liking.
This is the dish that keeps giving feel free to eat this as is, serve with rice, chips, fries. Whatever your heart desires, you will not be upset! Let me know what you think of this recipe and if you give it a try.
Best Ever Chili
The ONLY chili recipe you will need!
Ingredients
- 2 tbsp Vegetable oil You can use vegetable oil, olive oil whichever is your preference
- 2 tsp kosher salt
- 2 tsp pepper adjust if you do not like it too spicy
- 1 pound ground beef
- 1 red onion, diced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 4/5 garlic cloves, minced
- 1 6 ounce can tomato paste
- 1/4 cup chili powder (may use more later)
- 1 tbsp cumin
- 1 tbsp dried oregano
- 2-3 tsp smoked paprika
- 1/4 tsp ground cinnamon (I used a little less, the cinnamon can be a little overpowering)
- 1/2 tsp dried chili flakes (you can use less again if you don't like spicy)
- 1 12 ounce bottle of your favorite beer
- 1 28 ounce can crushed tomatoes
- 1 14 ounce fire roasted tomatoes
- 1 15 ounce black beans
- 1 15 ounce can of pinto beans
- 1 15 ounces kidney beans
- 1/4-1/2 cup maple syrup place 1/4 c. first and if you need to add more add another 1/4 c
Toppings: Add some freshly grated cheese, sour cream, tortilla chips, avocado, red onion. Whatever your heart desires

Before starting make sure all veggies are washed and chopped and set aside. If you do all the prep ahead of time it is literally just throwing ingredients in a pot!

Heat a large pot over medium heat add in the oil. Once heated add in beef and season with your spices ( I typically use pepper, garlic powder, onion powder season salt...you know the basics) This should take about 8-10 mins for the meat to cook. Once the meat is brown remove from the pan with a slotted spoon and set aside.

Using the same pot that you used to cook the beef. Adjust the heat to medium-low and add in the peppers, onions, and garlic. Stir often and add in a pinch of salt. Cook this about 6-7 mins. Cook until the veggies are soft. Add in all the spices (cumin, tomato paste, chili powder, cumin, paprika, cinnamon, and chili flakes. Stir it and make sure it is all well coated with the veggies. Continue to cook until the tomato paste gets darker in color. Add in the beer to deglaze the pot make sure you use a wooden spoon to stir any brown bits off the bottom of the pan.

Add the beef back into the pot and add the remaining ingredients the tomatoes, beans and maple syrup.

Bring your mixture to a boil, and reduce the heat to simmer. This should take about an hour. Halfway through give your chili a taste. Add any additional seasonings. Cook until the soup is at your desired consistency. Enjoy!
