Fall is finally here.
When I think of fall the first thing that comes to my mind is my favorite fall foods 🙂 I know some people enjoy the temperature change, the leaves changing colors, and being able to finally wear their fall outfits. Don’t get me wrong I get really excited about the fall colors maroons, mustard yellow, hunter greens I love it all. With that being said one of my favorite fall foods are Apple Cider Donuts!
Being a city girl it’s hard to be able to go Apple Picking. In Jersey, I had a farm that was nearby that we would visit all the time for pies, donuts, fresh fruit, hot apple cider 🙂
Since going apple picking wasn’t an option for me this fall I just couldn’t miss out on having apple cider donuts.
Thankfully, amazon has made my dreams come true once again. I have a new found love for my donut pan! I can’t wait to see what other creations I can create in this beauty.
If you don’t have a donut pan no worries you can use a mini muffin pan and make donut holes. These donuts are so delicious you will have to stop yourself from eating the whole pan! Who doesn’t love cinnamon and sugar? These baked donuts are lit. Try them out for yourself!
Apple Cider Donuts
Ingredients
Donuts:
- 10 tablespoon unsalted butter, melted
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3/4 cup buttermilk
- 2 cups apple cider reduced to 3/4 cup)
- 3 teaspoons baking powder
- 2 1/2 cup all-purpose flour
- 3 teaspoons cinnamon
- 2 teaspoons nutmeg
- pinch of salt
Glaze:
- 1 cup apple cider (reduced to 1/4 cup)
- 1/4 cup powder sugar
Topping:
- 1 teaspoon cinnamon
- 1/2 cup granulated suger
Instructions
-
Preheat oven to 350. Spray donut pan with non-stick cooking spray and set aside
-
Place 2 cups of apple cider in a small saucepan and simmer on low for 10-15 minutes. You will need to reduce the apple cider until it measures 3/4 cup. Set aside once cider has reduced.
-
In a large bowl combine flour, baking powder, cinnamon, nutmeg, and pinch of salt. Whisk until combined and set aside.
-
Inside your mixer combine the melted butter and sugars until smooth. Add in the vanilla and eggs and mix until combined. Pour in the apple cider and buttermilk and mix until smooth. In 2-3 batches mix in the flour until combined--do not over mix or your donuts will be tough.
-
Pour the batter into a piping bag (ziplock bag will work as well). Fill each donut hole about 3/4 (make sure not to fill this up completely or your donuts will over fill). Bake 12-15 minutes, or until the tops spring back when touch them. (These donuts should be done in about 14 minutes you do not want to over-bake them or they will be very tough)
-
Remove donuts from the oven, and let cool for about 5 minutes in the pan. While donuts are cooling start to prepare the glaze
-
In a small sauce, pan add 1 cup of apple cider. Reduce the cider until it is about 1/4. Whisk in the powdered sugar until smooth and glossy, then set aside.
-
Mix cinnamon and sugar in a shallow bowl.
-
Once donuts are cool enough to handle dip donut in glaze and then quickly into the sugared topping. Repeat for the remaining donuts. Serve warm.
